This is an expression my dear mother always uses! Used mostly in the scenario of "Here's what I think! Like it or lump it!"

  • Do you ever have a craving for a good ol' veggie pate?
    Here's a great recipe:
  • a cup of ground sunflower seeds, pumpkin seeds or nuts
  • 1/2 cup any kind of flour (though I might avoid rice if I were you
  • 1/2 cup nutritional yeast
  • 2 tsp parsley flakes (or a whole bunch of fresh)
  • 1 tsp basil (again, you can use fresh)
  • 1 tsp thyme (same goes)
  • 1 tsp salt
  • 1/2 tsp sage (or fresh)
  • 1/4 tsp sea kelp (you can get this in your local healthfood store, it is important to include this one!)
  • 11/4 cups water
  • 2-4 cloves minced garlic
  • 1 medium onion, chopped
  • 2-3 tbsp soy sauce, tamari or Braggs
  • 1 cup grated unpeeled potato
  • 1/3 cup oil (use your own fave)
Preheat the oven to ~350 F
Mix the dry ingredients up.
Whizz the water, garlic, onion and soy sauce in a blender until it's liquefied.
Add the wet ingredients to the dry ones, stir 'em up and add the potato and oil.
Oil a pie plate and fill with the pate mixture.
Bake about 45 minutes until it is set and somewhat browned.
It will firm up considerably as it sits.
Love this stuff, it's great on toast for brekkie, on crackers and in sandwiches any old time. It freezes like a dream.
Yum yum. I imagine that you can fiddle around with this recipe quite a bit. I bet it would be quite marvelous with grated carrots or yams. Hmmmm I might go try that!

  • It is only now, in motherhood that I understand the point of the 'handsfree' headset attachment for telephones. I must admit to feeling the urge to break into dance routines when I wear it though.

  • Okay, another recipe! This one is maybe a bit out of season. It's best with tomatoes from your own garden or from the market although it's so fast an easy that I've made it with good canned tomatoes and still loved it. (please note, for all those of you who like precise measurements in recipes, this will drive you nuts)
  • take about 2 lbs of tomatoes (use your own judgment for this!) Peel them and seed them if you like and chop them up
  • add a little salt, a little pepper, about 1/4 cup good olive oil, and as much chopped up fresh basil and parsley as seems right to you.
  • put some water on to boil for pasta.
  • put about 1 cup of ricotta in a separate dish and grate a whole bunch of fresh parmesan into it (again, as much or as little as you like!)
  • cook the pasta and when it's getting close to done, take about 1/4-1/2 cup of the pasta water and whisk it up with the ricotta mixture. It should make a nice creamy sauce!
  • drain the pasta and add the ricotta and tomato mixture to it. Add a little more freshly grated parmesan and voila!

  • Speaking of canned tomatoes… The wonderful man at the Italian grocery story told me to avoid canned tomatoes with added salt or sugar because it's a sign that the tomatoes are not particularly ripe. (This might be elementary to some of you! To me it was a revelation! Heehee)

  • Speaking of Parmesan… If you like freshly grated parmesan do I have the greatest grater for you! My mother stuck this one in my stocking a couple of years ago. At the time I thought "why would I need a zester like this? I NEVER zest lemons!" Now though, if I were a Survivor contestant this would be my luxury item (although I suppose I'd have to bring a big block of Parmesan cheese too!). It is perfect for making lovely light little feathers of parmesan cheese that melt in a second. My mouth waters as I write this!   • Any one seen those adds for disposable baby wash cloths? I laugh every time I see it! Oh yes, my life REALLY would be so much easier if I could just throw out all of those darned washcloths instead of having to throw them in the laundry! What's next? Disposable bath towels? Disposable table lamps? (so you don't have to dust them!)
